The Coratina trees are secular as most olive trees growing in Puglia region. They mainly grow in the hills surrounding the center of the Puglia Region known for its rich fertile soil and nurturing sun. The harvest runs from November until January. This lot was harvested in early December and has a wonderful robust and fruity taste with a light bitter aftertaste. Aroma is a fresh scent of grass and “green” leaves. The color is deep green with golden reflex.
Pairings: Mandarin Orange Balsamic, Blueberry Balsamic, Fig White Balsamic or Raspberry Ginger White Balsamic.
